When I decided to do this blog, I wasn’t so sure which direction to go, or what this would be about.  Then I thought, “Why can’t it be about everything in my head?”  So be it.

Not only am I a Red Seal Chef here in Canada, but I am also a Hospitality Instructor in the high school system…and a foodie.  My professional knowledge and experience, along with my love for food gives me the motivation to share with you who, what, where, how and why I am the way I am.

The blog title, “Mirepoix” is the base for any and all things created within the kitchen.  We make stocks, soups and sauces from Mirepoix.  But that is just the beginning.  Everything you receive on your plate may just have started with a basic Mirepoix.  Such as my blog.  I share experiences, tips, facts and restaurant reviews and let you run with them.  I provide the base…you decide what and how you want to use them.
